A Brief History of Sushi

What is sushi?
Sushi refers to any dish that utilizes rice seasoned with vinegar, which means it’s more than just the rolls so many of us are used to seeing. For example, there is the Nigri-sushi which is a sushi “rice-ball” made up of a pressed mound of rice, a dab of wasabi on top, and then topped tuna, shrimp, eel or even a fried egg.

Sushi, like many classic dishes, has a long and complicated history. Many of the origin stories go back thousands of years, with the beginnings changing slightly from story to story. Some believe that sushi was first written about in a fourth-century Chinese dictionary. One of the more plausible options is that sushi was actually introduced in Japan in the ninth century, where it quickly became a dietary staple. This continued until the 1820s when a man named Hanaya Yohei, considered the creator of modern nigiri sushi, popularized the dish even more by setting up a sushi stall in the Ryogoku district of Edo (now known as Tokyo). There, travelers would stop at the table to enjoy his creations, and popularity began to grow again due to his “fast food” approach to sushi.

By the 1970s refrigeration became good enough that fresh sushi and fish could be shipped around the world. The first sushi restaurant in the U.S. opened in Los Angeles in Little Tokyo, where it gained popularity. Soon, one of the first sushi restaurants outside of Little Tokyo, called Osho, opened in Hollywood, making it a popular spot for big-name celebrities and movie stars. Sushi continued to grow in popularity across the U.S., and now, you can find delicious, traditional sushi anywhere.
