What is Miso Soup?
First, let's start with miso itself is. Miso is a type of paste made from soybeans, rice, and sometimes barley. Miso is vegan and also works well with certain meats. It's known to be the foundation of many Japanese cuisines, and it's flavors know how to enhance any meal. It’s salty, yet has an entirely different taste of its own, often called the ‘fifth taste’ due to an amino acid called glutamate. Miso soup is composed of miso paste and dashi. Then,  they use Japanese fish stock as the broth and base of the soup. Finally, top it off with some tofu, seafood, and scallions! 

Origin
The creation of miso soup is unknown; however, we know when it first started to rise in popularity. In the 13th century, during the Japanese civil war, the soup's simplicity made it increasingly popular amongst soldiers. It was easy to make and delicious! Many people like to drink miso soup and take it on the go, another plus for soldiers. Surprisingly, a spoon is not recommended for miso soup, and drinking straight from the bowl is encouraged!
